HLTH221 Human Nutrition

Human Nutrition provides an introduction to the scientific basis of nutrition. Students will identify the essential nutrients in the human diet and describe the major functions of those nutrients in the body, especially as they relate to health and disease. Topics also include traditional Indigenous foods and the recent role that the Indigenous Food Sovereignty Movement has played in restoring cultural knowledge and regaining health in tribal communities. Class activities include labs, in-class lecture, field trip(s) to a community garden and local food banks, online dietary analysis, health coach role playing, a community education presentation, and other activities including laboratory experiences. The course provides additional levels of cultural study and application to prepare students to work specifically with American Indian & Alaska Native populations as well as other diverse populations within the public health setting.
